I love the Apple Pie Cafe in Hyde Park!  (Try the goat cheese salad or the quiche of the day.)  The deserts are outstanding and look almost too pretty to eat!  It's a very casual restaurant located inside the Culinary Institute of America which is situated over-looking the Hudson River.  It's a "must visit"! 

Mohonk Mountain House is one of the most breath-taking resorts in the country. The views are second to none and the 267 room Victorian castle features numerous fireplaces and fine dining.
